3. History of Norwalk Oyster Festival
New York used to be one major source of oysters in global trades. The estuaries in and around New York City itself provided the oyster lovers of the region with their beloved food. To make the story more interesting, there are more than few buildings in Manhattan that were actually built with the mortar made of crushed oyster shells.
Southern Fairfield County, which falls along the northern coast of the Long Island Sound, was the same. But New York City was destroyed by pollution and dredging for the shipping trade while the Norwalk oyster trade managed to live on. Norwalk Oyster Festival is one of the CT fall festivals dedicated to celebrating the history and importance of oysters and oystermen (fishers of oysters).
